¼ cup butter
½ cup white sugar
½ cup AP flour
½ tsp baking powder
½ tsp salt
2 eggs, beaten (if equivalent of 1/2 cup volume, adjust other cup measures accordingly like you would for Yorkshire puds)
1 cup milk
Fills a half dozen larger muffin pan.

Preheat oven to 400°F. Melt butter in pan. Stir together sugar, flour, baking powder and salt. Add eggs and mix well (I use a silicon coated whisk to really whip it up) and then add the milk and mix together.

Coat all edges of pan with butter, then temper remaining butter into mixture. Pour batter into pan. Bake for 15-20 minutes, serve hot. Maybe dust with some icing sugar or serve with a fruit compote (not too sweet) or fresh fruit.

Pannukakku is Finnish for.... pancake.
