Rough Puff Pastry

Puff pastry is a pain and most people buy it frozen. This gives you a similar flake but is homemade.

Recipe adjusted from Gordon Ramsay’s recipe on the BBC Good Food website for US audiences
1 cup plain ol' white flour
1 stick (½ cup) room-temp butter, cut into small cubes
¼ cup (75ml) cold water
½ tsp salt

Sift the flour into a bowl. Lightly rub the butter cubes into the flour. Just get the butter covered and squish it a bit.

Pour two thirds of the water in and try to form a dough. Use as much water as you can to get it to stick together in a ball, no more.

Let sit in the fridge for 20 minutes before rolling out for use.
